In the four-part series “We Make It, You Own It,” we’re taking a look into the lives of hard-working Mainers whose relationship with the state is deeply infused in their work.

Like many Mainers, Sarah Xiao has a deep connection to the water – and as a shellfish buyer, hers is deeper than most. Her trusty sidekick as she spends her days on the water is the L.L.Bean Boat and Tote, and just like oysters, or people, it takes on the aspects of the environment around it.

Erin French followed her passion and opened a restaurant in her hometown of Freedom, Maine. Travelers from all over the world gather at The Lost Kitchen to enjoy Erin's locally inspired and sourced menu.

Service is at full capacity for the first time in two years, and limited available local ingredients inspire Erin to get creative by bringing a new seafood dish to the menu. Later, Erin must work quickly to avert a dessert disaster.
